The Mure & Peyrot Lame is the perfect tool for breadmakers- both professional and home-based. It is used to score bread dough prior to baking. This Lame features a safety cap and is double-sided for extended use. Simply remove the first half of the cap. Once the exposed part of the blade shows signs of wear, pull out the cap and place it back with the opening on the unused blade angle to use the other blade. This is a great design! Once both sides of the blade have dulled, simply dispose.
