Big Soft Ginger Cookies:
2-1/4 Cups All Purpose Flour
2 Tsp. Ground Ginger
1 Tsp. Baking Soda
3/4 Tsp. Cinnamon
1/2 Tsp. Ground Cloves
1/4 Tsp. Salt
3/4 Cup Soft Margarine
1 Cup Sugar
1 Lg. Egg
1 TB. Water
1/4 Cup Molasses
2 TB Sugar
Preheat oven to 350 degrees (F). Sift together flour, ginger, Cinnamon, soda, cloves & salt. Set aside
In a large bowl, cream together margarine and 1 cup sugar till smooth. Beat in the egg and stir in molasses and water. Gradually stir in the sifted ingredients. Roll the dough into walnut-sized balls and roll them in the remaining sugar. Place on a parchment paper lined large cookie sheet about 1 inch apart. Bake for 8-10 minutes. Allow to cool on a rack. Makes 4 dozen.
