Herb Roasted Chicken:
1 4-5 lb. Roasting Chicken
1/2 Lemon
Salt & Pepper
1 Sm. Onion, Quartered
1/4 Tsp. Dried Rosemary
1/4 Tsp. Dried Thyme
1/4 Tsp. Dried Rubbed Sage
2 Sprigs Fresh Parsley
1/4 Cup Melted Butter
Preheat oven to 350 degrees (F). Rub inside of chicken with lemon half; sprinkle with salt and pepper. Place onion, dried herbs and parsley into chicken cavity. Place chicken in roasting pan and roast for about 20 minutes per pound of chicken. Baste with melted butter several times during baking. Internal temperature should be about 175 degrees (F) on a meat thermometer.
