Quick & Easy Family-Sized Lasagna
2 Lb. Italian Sausage
2 Cups Frozen Spinach, Thawed and Drained
4 Cups Mozzarella Cheese, Divided
3 Cups Ricotta Cheese
2 (28 oz.) Jars Chunky Pasta Sauce
18 No-Boil Lasagna Noodles
Preheat oven to 350 degrees (F). Cook Italian sausage in a heavy skillet over medium heat, stirring to break up the meat, until no longer pink. Stir in spinach. Drain well. Mix cooked sausage, 2 Cups mozzarella cheese and ricotta cheese in a medium bowl.
Place about 1 cup spaghetti sauce in a 12 X 17 lasagna pan. Top with 6 lasagna noodles, then with 1/3 of the sausage mixture. Repeat layers, ending with spaghetti sauce. Cover with foil and bake for 35-40 minutes until hot and bubbly. Sprinkle with the remaining mozzarella cheese and return to the oven for 5-10 minutes longer. Serves 12.
