Cappuccino Muffins:
2 Cups Flour
1/2 Cup Cocoa Powder
1/4 Cup Brown Sugar
1 TB. Baking Powder
1 TB. Finely Ground Coffee
Pinch of salt
2 Medium Eggs
1 Cup half & half
Zest of 2 Oranges
3/4 Cup Finely Chopped Semi-Sweet Chocolate
3/4 Cup Sour Cream
6 TB. Butter, softened
Preheat oven to 350 degrees (F). Sift together all of the dry ingredients. Beat eggs, butter, half & half and sour cream till creamy and smooth. Fold in dry ingredients, orange zest and chocolate, stir until just blended. Bake in paper-lined or greased muffin pan for 15-20 minutes or until done. Makes 12 muffins.
