Pasta Dough for Pasta Roller Machine:
2 Cups All-Purpose Flour
2 Large Eggs, slightly beaten
1/2 Tsp. Salt
Place the flour and salt onto a flat work surface, make a well in the center of the flour pile. Pour the eggs into the center of the well and begin mixing slowly by pulling flour into the eggs. Continue mixing and kneading. If the mixture is too dry and crumbly, spray it with a little warm water. Cover and allow to rest for 10-15 minutes. Roll out the dough using the pasta machine, dust with flour to prevent sticking. Roll on a high (thickness) numbered setting. Fold the dough and roll again. Continue rolling and folding until the dough smooths out. Once it is smooth, begin rolling and reducing the number (thickness) setting by 2s until you reach the thinness you desire.
