Deluxe Mini Carrot Muffins:
2 Cups Grated Carrots
1 Large Apple, Peeled & Grated
1/2 Cup Chopped Walnuts
2 Cups All Purpose Flour
1-1/4 Cups Granulated Sugar
3/4 Tsp. Baking Soda
1-1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1-1/2 Tsp. Cinnamon
1 Cup Coconut
3 Large Eggs
3/4 Cup Vegetable Oil
1-1/2 Tsp. Vanilla
For The Icing:
1/4 Cup Soft Butter
4 oz. Soft Cream Cheese
3 TB. Powder Sugar
1/2 Tsp. Vanilla
Preheat oven to 350 degrees (F). Sift together flour, soda, baking powder, salt, sugar and cinnamon. In a separate bowl, whisk together eggs, oil and vanilla. Combine with the flour mixture and stir in grated carrots, apple, coconut and nuts. Spoon into lightly greased mini muffin pan, filling each cavity 2/3 full. Bake for 10-15 minutes or until done. Remove from pan and allow to cool on wire rack.
For icing; beat together butter, cream cheese and vanilla till smooth. Stir in powder sugar and continue beating. Top each mini muffin with a dab of icing for just a touch of sweetness. Makes 36.
