This Calphalon 6 Cavity Muffin Pan is made of heavy-duty aluminized steel to provide years of use.
Fruity-Filled Muffins:
2 Cups All-Purpose Flour
3 Tsp. Baking Powder
1/2 Tsp. Salt
1/2 Cup Sugar
1 Egg, beaten
3/4 Cup Milk
1/4 Cup Vegetable Oil
1 Cup (any flavor) Fruit Jam
White Coarse Sugar for Garnish
Preheat oven to 400 degrees (F). In a bowl, sift together flour, baking powder, salt and sugar, set aside. In a small bowl, whisk together egg, milk and oil. Make a well in the center of the flour mixture and pour the egg mixture into it. Mix quickly and lightly until blended, mixture will be lumpy, do not beat it. Pour batter into lightly greased muffin pan (or lined with muffin papers), filling each cavity 2/3 full. Drop a spoonful of jam onto the center of each muffin (this will sink inside somewhat during baking, that is ok). Sprinkle with coarse sugar before baking for a sparkly shine.
