Peanut Blossom Cookies:
1/2 Cup Soft Butter
3/4 Cup Creamy Peanut Butter
1/3 Cup Light Brown Sugar
1/3 Cup Granulated Sugar
1 Lg. Egg
1 Tsp. Vanilla
1 TB. Milk
1-1/2 Cups All-Purpose Flour
1 Tsp. Baking Soda
1/2 Tsp. Salt
1/3 Cup Granulated Sugar (rolling in before baking)
48 Un-wrapped Kisses Candies (Milk chocolate, or white chocolate)
Preheat oven to 375 degrees (F).In a bowl, beat butter, peanut butter and the sugars till creamy. Add the egg and vanilla; continue beating till smooth. Beat in the milk. In a separate bowl, sift together the flour, baking soda and salt. Stir into the peanut butter mixture. Cover and chill dough for about an hour.
Roll chilled dough into 1 balls. Roll the dough balls in the granulated sugar and place about 1 apart on a parchment paper lined insulated baking sheet. Bake 8-10 minutes or until lightly browned. Immediately upon removing from the oven, push a Kiss into each cookie, pushing into the cookie just until it begins to crack. Cool on a wire rack. Makes 4 dozen.
