Healthy Whole Wheat Blueberry Muffins:
3/4 Cup All-Purpose Flour
1 Cup Sifted Whole Wheat Flour
4 Tsp. Baking Powder
1/2 Tsp. Salt
1/4 Cup Sugar
1 Egg
1 Cup Milk
1/4 Cup Vegetable Oil
1 Cup Fresh Blueberries
Preheat oven to 425 degrees (F). Put paper baking liners in muffin pan. In a bowl, sift flours, baking powder, salt & sugar.
Beat egg till frothy, add milk and oil and mix well. Make a well in the flour mixture and pour in milk mixture all at once. Stir quickly and lightly, do not beat, just stir till mixed but still lumpy. Stir in blueberries. Fill muffin cups 2/3 full. Bake 25 minutes or until done. Serve warm. Makes 12-14.
